What to make for Mother's Day brunch

We all (hopefully) know it is Mother's day this Sunday, May 10.  I hope everyone is as excited as we are to show our momma's how much we love them!  We really have so much to be grateful for when it comes to these super heroes of ours.  From digging through all of their jewelry, always picking at their center pieces on the kitchen table, to talking back and telling them to "calm down", we owe them.  A lot more than we will offer in this blog, but it's a start!  We have collected some of our favorite found recipes (that we have indeed tried, cocktails- maybe more than once..) and have put together, so hopefully you can make a little something special for your mamacita this Sunday.

I absolutely LOVE this recipe (and bonus, it's great as lunch for work the next day with a hard boiled egg).

Preheat your oven to 400 degrees

You will need:

-3-4 red and golden beets

-1 bunch carrots

-1 sweet potato

-3 purple sweet potatoes

-6 baby bella mushrooms

-2 cloves garlic

-1/4 cup EVOO

-Juice of 1 lemon

-Rosemary

-Oregano

-Salt and Pepper

This recipe could not be easier.  Peel and chop all root veggies and mushrooms.  Set them aside in a large glass baking dish.  Meanwhile, mix together EVOO, lemon juice, salt and pepper (to your liking), grated garlic, 1 tablespoon rosemary, and 1/2 tablespoon Oregano.  With a fork or whisk, mix all the ingredients to create your "dressing".  Pour over all veggies and mix together WELL.  Place in the oven once vegetables are covered and set your timer for 35 minutes.  When your timer goes off, add sliced baby bellas coating them in the dressing.  Cook for 5 more minutes and voila!  Top it with an egg cooked anyway mom loves it.

This next one is for moms with a sweet tooth.  Or any living human being because it consists of Nutella.

Sprinkle with either cinnamon or powdered sugar and enjoy!

Ingredients:1/3 oz. Rose Syrup1 1/3 oz. VodkaPink Rose Petals1 oz Rose Water3 oz TONIC1 drop of pink food coloring

Shake on ice and pour … garnish with rose petals … ENJOY!!!
